Mango Pudding


This one started out as baby food for my eight-month-old, but in this household anything sweet is up for grabs with everyone. This is my favorite dish so far. It's so very creamy, you won't believe it. If you have kids, give them this, they'll love it!

MANGO PUDDING
1 c macadamia nuts, soaked for an hour
2 oz water
3 cups peeled, fresh mango
1/4 c raw agave nectar
1/4 t sea salt

Blend macadamia nuts and water until smooth. While blender is running, add mango, agave nectar and sea salt. Process until creamy. Refrigerate for an hour to set.
