EpPECANS

My husband, Mr. Epperson, is back in the kitchen while I'm juice feasting. Which is a good thing, he's a talented chef in his own right. This is recipe is his creation.


Sweet and Spicy Pecans

Pecans are a good source of protein and unsaturated fats.
2 cups pecans, soaked
1 tablespoon maple syrup*
1/4 teaspoon cayenne pepper
1/8 teaspoon sea salt

1 In a bowl, combine maple syrup, cayenne and sea salt.

2 Add pecans. Mix until well coated.

3 Spread pecans on Teflex sheets. Dehydrate at 100 degrees for 18-24 hours or until pecans are very crispy.

*Not a raw ingredient.

Tell that man of yours that these sound awesome!!! My man has a couple of dehydrated nut recipes that he came up with from somewhere. I'll have to have him send them to you to pass along.

It's so simple, but sometimes simple is best. I bet my husband would eat these. We just discovered that he loves pecans. He tried them unexpectedly when he mistook them for walnuts.

Yea, these didn't make it out of the dehydrator fully. :) I found that I had to dry them in the dehydrator after the soak to get the maple/cayenne mixture to stick. Overall I'd say they're pretty good, yet I would have just used cinammon, as pecans when they are dehydrated tend to taste buttery naturally.
